Istanbull Katz is a contemporary Turkish dining experience in Brighton, created by Turkish woman entrepreneur Ash, whose work in the city has become closely associated with animal welfare, hospitality, and community.

Ash is also the founder of Munchies Craft Cat Café, a space dedicated to the care and adoption of rescue cats, and the creator of Purrfect Space, an co-working and cultural venue designed around wellbeing, creativity, and rescue animals. Across all of her projects runs the same belief: hospitality can be both beautiful and meaningful.

With Istanbull Katz, she introduces a refined expression of Turkish cuisine inspired by the depth and elegance of Istanbul’s culinary culture. The menu moves beyond familiar classics to explore the broader landscape of Anatolian flavours, guided by seasonality and presented with a lighter, contemporary approach.
